Interstate Hotels & Resorts, a large hotel management company, has added extensively to the vegetarian and vegan options on its restaurant and banquet menus. The company, which manages 540 properties in 12 countries, said the move was in response to a 350 percent increase in the number of people consuming a plant-based diet within the last decade. Bradley Moore, vice president of food & beverage operations, said the company recognized a shift in the growing demand of consumers craving healthier options, resulting in a clear need to offer plant-based menu items. Hotels will customize menus online and will also be provided with collateral aiding in the promotion of the new additions. Interstate manages hotels operated by Hilton, Marriott, IHG, Choice and others.
